Weight Watchers Breakfast Recipe: Crispy Old Bay Potatoes

We all love potatoes right? Well I certainly do, and whilst I avoid carbs and high-sugar foods, it is nice to have a tasty breakfast from time to time so long as you count your weight watchers points

If you’re looking to splurge just a little and need some Weight Watchers breakfast ideas, you can eat these crispy breakfast potatoes on the Weight Watchers Freestyle plan. 

This breakfast potato recipe serves four and has a points value of 8 points per serving.

Ingredients Needed for This Weight Watchers Breakfast Recipe

I’m always looking for a good Weight Watchers breakfast recipe I can make on the weekends or for brunch. I make my breakfast potatoes with onions, two different kinds of potatoes, bell peppers, and bacon. There’s also garlic and maple syrup for more flavor, and Old Bay makes a fantastic breakfast potato seasoning!

  • 3 medium golden potatoes
  • 3 medium red potatoes
  • 1 Red bell pepper, chopped
  • 1 Orange bell pepper, chopped
  • 1 Tbsp olive oil
  • 4 pieces of bacon
  • 2 cloves garlic, minced
  • 2 Tbsp pure maple syrup
  • 2 tsp kosher salt
  • 2 tsp crushed black pepper
  • 2 Tbsp Old Bay spice
  • Parsley for garnish

How to Cook Breakfast Potatoes

Preheat oven to 350 degrees and line a cookie sheet with parchment paper.

Place bacon strips on parchment paper.

Once oven is preheated place the cookie sheet in the oven and bake for 10-15 minutes or until the bacon is crispy

Remove from oven and allow to cool before chopping.

Pour the oil and minced garlic in a large pan over medium to high heat.

Once the oil is hot, add the potatoes.

Sprinkle the salt, black pepper and old bay spice onto the potatoes and mix.

Mix in the bell peppers and cook for 10 minutes or until soft.

Mix in the chopped bacon.

Place the potatoes into a serving dish and top with parsley.
