This is a tasty breakfast potatoes recipe which you can eat on the Weight Watchers freestyle plan. 

We all love potatoes right? Well I certainly do and whilst I avoid carbs and high sugar foods, it is nice to have a delicious and tasty breakfast from time to time so long as you count your weight watchers points

This breakfast potatoes recipe serves four and has a points value of 8 points per serving.

Ingredients Needed For This Breakfast Potatoes Recipe

  • 3 med golden potatoes
  • 3 med red potatoes
  • 1 Red bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 1 tbsp olive oil
  • 4 pieces of bacon
  • 2 minced garlic
  • 2 tbsp pure maple syrup
  • parsley for garnish
  • 2 tsp kosher salt
  • 2 tsp crushed black pepper
  • 2 tbsp Old Bay spice

How To Make Breakfast Potatoes

Preheat oven to 350 degrees and line a cookie sheet with parchment paper.

Place bacon strips on parchment paper.

Once oven is preheated place the cookie sheet in the oven and bake for 10-15 minutes or until the bacon is crispy

Remove from oven and allow to cool before chopping.

Pour the oil and minced garlic in a large pan over medium to high heat.

Once the oil is hot, add the potatoes.

Sprinkle the salt, black pepper and old bay spice onto the potatoes and mix.

Mix in the bell peppers and cook for 10 minutes or until soft.

Mix in the chopped bacon.

Place the potatoes into a serving dish and top with parsley.

Enjoy!
