🥚Ingredients Needed for This Weight Watchers Breakfast Recipe
I’m always looking for a good Weight Watchers breakfast recipe I can make on the weekends or for brunch. I make my breakfast potatoes with onions, two different kinds of potatoes, bell peppers, and bacon.
There’s also garlic and maple syrup for more flavor, and Old Bay makes a fantastic breakfast potato seasoning!

- 3 medium golden potatoes
- 3 medium red potatoes
- 1 Red bell pepper, chopped
- 1 Orange bell pepper, chopped
- 1 tablespoon olive oil
- 4 pieces of bacon
- 2 cloves garlic, minced
- 2 tablespoon pure maple syrup
- 2 teaspoon kosher salt
- 2 teaspoon crushed black pepper
- 2 tablespoon Old Bay spice
- Parsley for garnish

Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
Place bacon strips on parchment paper.
Once oven is preheated place the cookie sheet in the oven and bake for 10-15 minutes or until the bacon is crispy
Remove from oven and allow to cool before chopping.
Pour the oil and minced garlic in a large pan over medium to high heat.
Once the oil is hot, add the potatoes.
Sprinkle the salt, black pepper and old bay spice onto the potatoes and mix.

Mix in the bell peppers and cook for 10 minutes or until soft.
Mix in the chopped bacon.
Place the potatoes into a serving dish and top with parsley.
