Easy Pumpkin Streusel Bars
Today we have a super tasty and easy pumpkin streusel bars. Pumpkin bars taste delicious and when combined with this yummy streusel topping, these streusel bars won’t last long! You may need to make a double batch!

What Is a Streusel Topping Made Of?
if you want to know what makes a streusel topping the answer is simple. Streusel topping is a delicious and sweet topping that has a crumbly texture and is generally made from flour, butter and sugar.
A streusel topping may have spices and flavours added to it and you can also add chopped nuts to enhance the texture.

INGREDIENTS NEEDED FOR THIS pUMPKIN sTREUSEL BARS rECIPE
For the streusel crust layer
- 3 C flour
- 3 C light brown sugar
- 2 tsp ground cinnamon
- 1 tsp kosher salt
- 1 ½ C unsalted sweet cream butter, softened
Pumpkin Filling
- 2 – 8oz packages cream cheese, softened
- 1 Cup Oats
- 1 C Pumpkin Puree
- 2 TBSP flour
- 2 tsp pumpkin pie spice
- 2 tbsp whole milk
- 2 large eggs

How to Make Pumpkin Streusel Crust
Line a 9×13 baking dish with parchment paper and preheat oven to 350 degrees
Using a large bowl, whisk together the flour, brown sugar, oats,
ground cinnamon and salt.
Cut the butter into cubes.
Using your fingers, work the butter into the dry mixture to create a
sand like crumble.
Press half of the crumble mixture into the bottom of the pan.
Set aside the other half.
How to Make the Pumpkin Streusel Filling
Using a large bowl, beat together the cream cheese and sugar until smooth
Beat in the pumpkin, pumpkin pie spice and flour until combined
Beat in the eggs, one at a time until combined
Beat in the milk until combined
Pour batter over crust and sprinkle remaining crumble mixture
Bake in the oven for 35-45 minutes or until the center is set
Allow to cool completely
