To say I love decorating cupcakes might by just a little bit of an understatement. I really, really, really love decorating anything and everything. Can you blame me? It’s so much fun to take something delicious, and then make it adorable as well. Seriously. It’s like treating your taste buds to some beautiful artwork – if that makes sense.
When’s the last time that you sat down and enjoyed decorating cupcakes? If you haven’t done it in a while, it’s time. Not only is it fun, but it’s a really great stress reliever as well – PLUS, you get to lick the spoon and utensils clean when you’re done!

Groundhog Cupcakes
Here’s the deal. Groundhogs get a bad rap. They’re really only talked about one time a year and the entire fate of our Spring depends on whether or not they show their shadow. If the decide Spring comes early, everyone loves them. But if they decide that Winter is going to hang around for just a little bit longer….”boo, Groundhogs, boo!”.
It’s just a shame. How could anyone not think that groundhogs are adorable? I decided that it was time to decorate cupcakes in all their glory, and I’m quite pleased with the results if I do say so myself!

Groundhog Nutter Butter Cupcakes
Ingredients to Make Groundhog Cupcakes:
12 cupcakes, your favourite
1 cup green frosting, your favourite
12 Nutter Butter cookies
24 candy eyes
24 marshmallow bit pieces
12 brown M&Ms
24 almond slices
Brown jimmies
¼ cup milk chocolate chips. melted
How to Make Groundhog Cupcakes
Choose the top of a Nutter Butter cookie.
Gently press two almond slices into the cream center between the cookies with one on each side as the ears of the groundhog.
Using a toothpick, dab a small amount of chocolate on one M&M candy.
Press the candy against the middle of the upper half of a Nutter Butter cookie.
Above the M&M, use melted chocolate to attach two candy eyes.
Below the M&M, use melted chocolate to attach two marshmallow bits as groundhog teeth.
Allow chocolate to set completely.
Pipe green frosting on each cupcake.
Use a knife to carefully cut a slit the width of a Nutter Butter in the top of each cupcake before sliding a cookie into the cupcake.
Or, place two almond slices into the cupcake to look like ears peeking from the ground.
Sprinkle jimmies around the cookies or ears.
Your Groundhog cupcakes are now complete.
