If you’re looking for a spaghetti dish with a twist, this is it! This has to be one of my favourite Monterey chicken recipes. The chicken, spaghetti, spinach and cheese blend together so well and taste amazing.
In fact, whenever we cook this recipe, the whole family asks for seconds. It’s that great. I’m sure you will love this easy recipe for chicken spaghetti.

What Kind Of Cheese Is Monterey Jack?
Monterey Jack, sometimes known as Jack cheese is an American white, semi hard cheese made using cows milk.
Monterey Jack has a mild and slightly sweet flavour and was originally made in the 18th Century by Franciscan friars of Monterey California.
Monterey Jack cheese on it’s own is a great topping for any family recipe and can be mixed with Colby cheese to create Colby-Jack or combined with yellow Cheddar to produce Cheddar Jack cheese. When mixed with chili peppers and herbs the cheese then becomes Pepper Jack.
Is Monterey Jack Cheese The Same As Mozzarella?
No. Monterey Jack is not a Mozzarella cheese. Mozzarella is a soft cheese, whereas Monterey Jack is a harder cheese. They both taste delicious and the harder cheese is still great for family meals and spaghetti dishes!
Ingredients For This Monterey Cheesy Chicken Spaghetti Recipe
- 1 12-oz box of spaghetti
- 2 cups cooked rotisserie chicken or your own shredded chicken
- 1 cup Monterey Jack cheese, shredded
- 1/2 cup parmesan cheese, shredded
- 1 cup sour cream
- 1 egg, beaten
- 1 10-oz package chopped spinach, thawed
- 3 cloves, minced or 1 tablespoon garlic powder
- 2 10-oz cans cream of chicken soup
- 1 tsp onion powder
- 1 6-oz can french fried onions, divided
How To Make Chicken Spaghetti with MONTEREY JACK
This Monterey chicken casserole is a breeze to make. Start by preheating your oven to 350 degrees. Cook the spaghetti al dente according to package directions.
While the pasta is cooking, beat the egg in a medium bowl.
Next add the sour cream, cream of chicken soup, Parmesan cheese, Monterey Jack cheese, garlic and onion powder. Stir to combine.
Add the chicken, spinach, and half the fried onions to the sauce mixture. Stir to combine.
Drain the spaghetti and then add it to the chicken mixture. Toss to combine.
Transfer to a 9×13 baking dish sprayed with non-stick baking spray.
Spread evenly and cover with foil.
Bake at 350º for 30 minutes
Remove from the oven and remove foil.
Top with remaining cheese and fried onions.
Return to oven for another five minutes. Your Monterey Chicken Spaghetti is now ready to serve. Enjoy!
Monterey Jack Chicken Spaghetti Recipe

Ingredients
- 1 12 oz box of spaghetti
- 2 cups cooked rotisserie chicken
- 1 cup Monterey Jack Cheese shredded
- 1/2 cup parmesan cheese shredded
- 1 cup sour cream
- 1 egg beaten

Add the chicken, spinach, half the fried onions to the sauce mixture.
Stir to combine.
Drain the spaghetti and to the chicken mixture.
Toss to combine.
Transfer to a 9x13 baking dish covered in non-stick baking spray.
Spread evenly and cover with foil.
Bake at 350º for 30 minutes

Notes
You can substitute the Monterey Jack for a colby or mozarella cheese if you prefer.
