  • 1 pound of cooked fettuccine pasta – save 2 cups of pasta water
  • 6 T butter 
  • 2 T of minced garlic
  • 1 cup of pumpkin puree
  • ⅛ tsp nutmeg 
  • ⅔ cup half and half 
  • ½ cup of grated parmesan cheese
  • Parsley & extra for garnish

How to Make Pumpkin Pasta Fettuccine

Step 1 Cook the Fettuccine Pasta

Cook the pasta according to package directions. Drain the water but save 2 cups of pasta water.

Step 2 Add Garlic and Butter

Add the garlic and butter to a skillet and cook for 1-2 over medium-low heat.

Step 3 Stir in Pumpkin

Stir in the pumpkin, nutmeg, and half and half.

Step 4 Add Water

Add in the pasta water but only at a 1/2 cup at a time. This will give your sauce consistency for adding to the pasta. Stir and cook the sauce for 2-3 minutes on medium-high.

Step 5 Garnish Your Fettuccine

Put the pasta on a plate and garnish with parsley and more Parmesan cheese. you can also add pumpkin seeds.
