If there is one dish I love in this lifetime, it’s Instant Pot Arroz Con Pollo. This is a traditional dish of Spain and Latin America. This dish includes chicken breast and veggies! The flavor is also pretty awesome!

Instant Pot Arroz Con Pollo

This is an excellent one-pot dinner that you can make right in the comfort of your own home. I love making it in my Instant Pot because I don’t have to dirty up a ton of dishes. The rice from this meal is my favorite. It’s flavorsome and our kid likes it so much! 

Ingredients:

  • 5-6 boneless chicken tenders
  • 2 tsp. paprika
  • Salt and pepper to taste
  • 4 tbsp. olive oil
  • 1 cup onion, chopped
  • 1 cup green pepper, diced
  • 1 cup red pepper, diced
  • 1 tbsp. minced garlic
  • 2 cups basmati rice
  • 3 cups chicken broth
  • 1/2 tsp.saffron
  • ½ tsp. Curry
  • 1 bag of frozen mixed vegetables (corn, carrots, peas and green beans)
  • Green onions

How to Make Instant Pot Arroz Con Polo

Turn on the Instant Pot ON and select “sauté”. Add the olive oil. Add the diced chicken and cook for 5 – 8 minutes. 

Remove chicken from the Instant Pot and set to the side. Add half of the olive oil, onion, peppers, garlic. Saute’ 3-5 minutes, stirring often.

Add the chicken broth, rice, saffron, frozen vegetables, and cooked chicken. Mix to combine. Saute for 5 minutes.

Secure the lid to the Instant Pot. Select manual cooking time to 10 minutes. Pressure release on its own for 10 minutes.

Turn the valve to Vent to release pressure. Then remove the lid. Press “cancel”. Garnish with diced onions

The next time you don’t want to spend too much time cooking, but want a delicious meal, make this. This is one Instant pot meal you don’t want to miss out on.
