Instructions
Turn on the Instant Pot ON and select “sauté”. Add half the olive oil. Add the diced chicken and cook for 5 – 8 minutes.
Remove chicken from the Instant Pot and set to the side. Add half of the olive oil, onion, peppers, garlic. Sauté’ 3-5 minutes, stirring often.
Add the chicken broth, rice, saffron, frozen vegetables, and cooked chicken. Mix to combine. Sauté for 5 minutes.
Secure the lid to the Instant Pot. Select manual cooking time to 10 minutes. Pressure release on its own for 10 minutes.
Turn the valve to Vent to release pressure. Then remove the lid. Press “cancel”. Garnish with diced onions.
