Egg and Spinach Muffins Ingredients
- 4 eggs
- ½ cup Reduced Fat milk
- ½ cup mozzarella
- ½ cup chopped ham
- 1 cup baby spinach
- ⅛ tsp salt
- ⅛ tsp pepper
How to Make Weight Watchers Spinach Muffins
Spray the inside of the muffin/cupcake tin with nonstick spray or use muffin tins. Add all ingredients, except ham and cheese, to a food processor or blender and mix until well incorporated. Chop ham into small cubes. Scoop an even amount of the egg mixture into a 12 cavity cupcake/muffin tin. Add ham and cheese, to your liking. To cut down on the prep time, you can slice ham for baked ham and then cube that up. I don’t think that deli meat works well because it’s too thin to really hold its own. You can change up the type of cheese that you want to use each time. Ingredients
- 4 eggs
- ½ cup milk

Instructions
