This recipe is made with brown, sugar, dates, and pecans, and we all know how delicious they are. But, what about squash? What is squash and does it taste good?
Some people consider squash a vegetable because it’s found next to other vegetables in the produce section. However, squash is actually a fruit because it contains seeds. Just like a tomato is actually a fruit, but we all think it’s a vegetable. There are many different varieties of squash, but this recipe calls for acorn squash.
What is Acorn Squash?
Acorn squash is small and shaped kind of like an acorn. Acorn squash has a smooth, sweet, and nutty flavor, but can be stringy sometimes. So, to answer the question as to whether squash tastes good; acorn squash tastes sweet and delicious if you like sweet stuff.
Prep time- 5 minutes
Cooking time- (7 minutes to come to pressure, 5 minutes cooking time, 5 natural pressure release time)
Instant Pot Acorn Squash Ingredients
- 1 acorn squash, halved
- ½ cup brown sugar
- ¼ cup butter, unsalted
- ½ cup dates, chopped
- ½ cup pecans, chopped
How To Cook Acorn Squash In Instant Pot
Add 1 cups of water to the inner pot of the Instant Pot. Cut acorn squash in half and scoop out seeds. Put the acorn squash into an Instant Pot safe baking pan.
Mix brown sugar, dates, and pecans in a bowl.
Divide the mixture between each acorn squash half.
Cut butter into small pieces and put over the top of the filling.
Close lid and set for a manual high-pressure cooking time of 5 minutes. Allow for a natural pressure release for an additional 5 minutes when the cooking time has finished.
Vent any remaining pressure.
Cut each squash half into 2 pieces.
Serve and enjoy. Makes 4 servings.
