Weight Watchers Chicken Broccoli Casserole
One of my favourite recipes of all time has to be my mums famous Chicken Broccoli Casserole dish. I absolutely love it. Chicken casserole is a delicious family meal and great if you’re following Weight Watchers or another healthy eating plan.
Mum’s Chicken and broccoli casserole recipe is only 5 Weight Watchers points per serving. It’s a healthy chicken casserole and one you will love. My family can’t get enough of it and this is one tasty chicken recipe we cook regular.

Ingredients For This Weight Watchers Chicken Casserole Recipe
- 1 Whole Chicken
- 1 Broccoli
- 3 medium Carrots
- 5 Tablespoons Sour Cream (5 points)
- 2 Tablespoons Lemon juice
- 1 can Campbells Chicken Soup (4 points)
- 1 slice of bread made into Breadcrumbs (2 points)
- 150g grated Chedder Cheese (14 points)
Serves 5 people – 5 points per serving.
How To Cook This Chicken And Broccoli Casserole
Preparing the chicken
The first step for cooking this healthy chicken casserole is to cook your whole chicken.
Place your chicken in a pot and boil for 35 minutes. Alternatively you may want to pressure cook your chicken in an Instant Pot. The choice is yours.
Once your chicken is cooked, remove all the chicken from the bone and place in your casserole dish.
Preparing the chicken casserole dish
Chop the broccoli and carrots and mix with the chicken in your casserole dish. (You may want to add mushrooms – another zero point vegetable)!
My family are not huge fans of mushrooms but the option is there!
Get a bowl. Open your can of chicken soup and pour into the bowl.
Add the sour cream and lemon juice to the soup and mix through.
Now grate your slice of bread and cheese.
Pour the chicken casserole sauce over the chicken and vegetables.
Next sprinkle the breadcrumbs over the top of the dish followed by cheese!
Cook your chicken casserole in the oven for 25 minutes until the cheese is golden brown.
Your weight watchers chicken casserole is ready to serve. You may want to add rice to your meal. If so then don’t forget to count the extra points.
I love this recipe on it’s own and there is usually enough left over to for lunch the next day.
