This Chicken Broccoli Casserole is a tasty, family-friendly dish that’s healthy, easy to make, and perfect for meal prep, especially if you're following the Weight Watchers plan.
Place your chicken in a pot and boil for 35 minutes. Alternatively, you may want to pressure cook your chicken in an Instant Pot. The choice is yours.
Once your chicken is cooked, remove all the chicken from the bone and place in your casserole dish.
Chop the broccoli and carrots and mix with the chicken in your casserole dish. (You may want to add mushrooms – another zero-point vegetable!)
Get a bowl. Open your can of chicken soup and pour it into the bowl. Add the sour cream and lemon juice to the soup and mix through.
Now grate your slice of bread and cheese. Pour the chicken casserole sauce over the chicken and vegetables. Next sprinkle the breadcrumbs over the top of the dish followed by cheese!
Cook your chicken casserole in the oven for 25 minutes until the cheese is golden brown. Your Weight Watchers chicken casserole is ready to serve. You may want to add rice to your meal.
