Tips for Making Spinach Feta Rice Casserole
I like to use brown rice for this recipe but you could use white rice as well. Also, if you don’t have sour cream, you could use unflavored Greek yogurt, too. Those are a few easy substitutions or variations that could easily be done.
Ingredients Needed to Make Spinach Feta Rice Casserole
- 2 tablespoons olive oil
- ½ cup shallot, chopped fine
- 10 oz frozen spinach thawed & squeezed
- 2 tablespoons garlic, minced
- 3 cups brown rice, cooked
- ¾ cup feta cheese, crumbled
- 1 teaspoon dry dill
- Salt & pepper to taste
- 4 eggs
- ¼ cup sour cream
- 1 tablespoon lemon juice
How to Make Spinach Feta Rice Casserole
Preheat oven to 425 degrees
Heat olive oil in a cast-iron skillet over medium heat
Cook shallots until tender
Add in spinach and garlic until spinach is warmed
Remove from heat, cool slightly
Stir in rice, feta, dill, salt & pepper, and lemon juice
Whisk together eggs and sour cream
Add to rice mixture and stir well, smoothing out the top
Bake 20-25 minutes until light golden brown
Rest 5 minutes before serving
