Weight Watchers Vegetable And Cucumber Bites Recipe

If your following the weight watchers plan and looking for healthy party snacks then look no further. Today I am sharing these super tasty vegetable and cucumber bites. 

This is one of my my favourite easy party appetizers and a go to easy to prepare dish. At only 1 Weight watchers point per three cucumber bites, this is a great little recipe for everyone to enjoy. weight watchers cucumber bite bites

Ingredients For Vegetable Cucumber Bites 

  • 2-3 Cucumbers
  • 8 oz. Cream Cheese, softened
  • 1 Red Pepper
  • 1 Green Pepper
  • 1 Yellow Pepper
  • 1 bag Matchstick Carrots
  • 1-2 Tbsp. Ranch Seasoning
  • Vegetable Peeler or Mandolin

How To Make Vegetable Cucumber Bite Appetizers

In a small bowl, combine the cream cheese and ranch seasoning and mix well.

Using a peeler or mandolin, cut long thin slices of the cucumbers.

Once you’ve reached the seeds then stop and start with another cucumber.

Spread a thin layer of cream cheese mixture on each cucumber slice.

To be able to count this accurately for Weight Watchers make sure you use one teaspoon of cream cheese per cucumber roll.  

3 teaspoons of cream cheese is the equivalent of one tablespoon and one tablespoon equals three weight watcher points. 

Cut the peppers into large matchstick size pieces. I made mine a little bigger than the carrot matchsticks.

At the end of each cucumber slice, lay a few carrots, and one of each colour pepper pieces.

Start at the end with the veggies and roll up the cucumber slices.

You can put a little extra ranch cream cheese at end of the cucumber slice to make sure the roll sticks when you stand them up.

Serve right away or chill for a few hours first.
