I recently had an appointment with my dietitian to discuss low-carb meals that can help me to better control my blood sugar levels. You see, I've been suffering from Reactive Hypoglycemia for the past 6 months, and it's really impacted my health. I didn't know what was making me so unwell each day, and spent half the year resting and feeling sick.
We now know that my body cannot tolerate carbs any longer, and as a result, I have been experimenting and trying out new and different low-carb meals. Today, I am sharing this fantastic low-carb Garlic chicken dish with meatballs and spiralized Zoodles.

- Medium Zucchini, Spiralized
- 4 Tablespoon Olive Oil
- 2 Tablespoons Butter

Combine the ground chicken, egg, pepper, salt, minced garlic and Parmesan cheese.
Heat the olive oil to a large pan. Form small 2-3" meatballs from the chicken mixture and place in heated pan.

Cook 5-10 minutes.

Low Carb Chicken Meatballs With Zoodles
Ingredients
- 1 Pound Ground Chicken You could also opt for Turkey
- 1 Egg
- ½ teaspoon Pepper
- ½ teaspoon Salt
- 1 teaspoon Minced Garlic
- 1 Cup Parmesan Cheese Grated
- 4 Zucchini Spiralized
- 4 tablespoon Olive Oil
- 2 tablespoon Butter
Instructions
- Combine the ground chicken, egg, pepper, salt, minced garlic and Parmesan cheese.
- Heat the olive oil to a large pan. Form small 2-3" meatballs from the chicken mixture and place in heated pan.
- Cook about 5 minutes on each side - about 15-20 minutes total or until cooked through.
- Once the meatballs are cooked through, remove from the pan.
- Add the 2 tablespoons of butter to the pan and add in the zoodles.
- Cook 5-10 minutes.
- Remove and serve with the chicken meatballs.
