Disney Inspired Clam Shell Little Mermaid Cookies

Today on the blog we are sharing a tutorial for Disney Inspired Little Mermaid Clam Shells. The Little Mermaid is an all-time favourite of mine and this recipe is sure to be a hit at your next underwater themed party or Disney themed fun day. I hope you like this recipe. Enjoy!

Ingredients for Mermaid Shell Cookies

  • 3 Cups of flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 Cup soft unsalted butter
  • 1 Cup granulated sugar
  • 1 egg

How to Make Mermaid Cookies

Cream the soft butter with the sugar until the combination is smooth not grainy to the touch in a mixing bowl.

Add eggs…Continue to mix.

Add the vanilla.. Continue mixing.

Sift the four, baking soda, and salt together.

Add the dry mixture to the wet mixture.

Continue mixing to make sure all ingredients are thoroughly blended.

Make the dough into a ball, wrap it in cling wrap completely covering the entire dough ball.

Put in the refrigerator for about 6 hours or overnight. Check to see if the dough is firm.

Preheat oven to 325 degrees.

Pull the cookie dough out of the refrigerator and sit it out to soften up a bit.

Put flour out on the cutting board, rub flour on the rolling pin, and work some flour into the batter. (if needed).

Roll the dough out on the cutting board and using the cookie cutter begin to make your cookies.

Line the cookie sheet with parchment paper.

Using a metal spatula move the cut cookies to the parchment lined cookie sheet.

Bake at 325 degrees for 8 minutes. Check to see if the cookies are thoroughly baked.

Take the cookies off of the cookie sheet and put on a wire rack to cool completely. (About 10 minutes).

How to Make Icing Sugar for Your Cookies

Ingredients For Your Clam Shell Cookie Icing

  • 2 egg whites
  • 1 C powder sugar
  • 1/2 tsp cream of tartar
  • 1 tsp vanilla
  • 1 piping bag with a number 2 tip
  • 1 bowl to thin the icing

Icing Directions:

Combine all ingredients into a stand up mixing bowl

If the icing looks a little soupy add in 1/2 C powder sugar

mix on medium speed until stiff peaks form, about 5 minutes

scoop some icing into the piping bag and the rest into the bowl

Add into a squeeze bottle.

add 1 tbsp of water and mix to thin the icing.

Take about half of your cookies to decorate and leave the other half for the bottom of the shell.

Outline your cookie using the white icing in the piping bag.

Using the thinner icing, fill in the cookie

Set aside for 1 hour.

Using the icing bag again, add lines to your decorated clam and set aside again for another 1 to dry.

Buttercream frosting Recipe

  • 1 C of softened sweet cream butter
  • 2 C powder sugar
  • 1 tsp vanilla extract
  • 1 tsp heavy whipping cream
  • 2 drops of pink food dye
  • 1 piping bag with a large star tip
  • 1 bag of coloured pearl balls

Adding Buttercream to Your Mermaid Shell Cookies

Using a standing mixer, mix all ingredients, except the colour, until combined and stiff peaks form.

Add the food dye and mix until combined.

Scoop the frosting into the piping bag.

Pipe on the frosting onto the naked clam shell cookie.

Grab the decorated shell and place onto the top of the frosting leaning so that you can see the frosting

Finally add a coloured pearl ball. Your super delicious “Little Mermaid” inspired clam shell cookies are now ready to enjoy!
