Imagine a weekend night without the children, what kinds of things can you do? You can have an amazing romantic evening with your partner. But let us start with some easy recipes for a great romantic meal. We will start with an appetizer, follow it with the main course and end with a nice dessert. These recipes will be quick and easy to make giving you time for a romantic evening afterwards. 

The Appetizer

We will start with an amazing appetizer to get the meal started. It has few ingredients and will be quick and easy to make. There are similar appetizers to find here, and any of them can make the beginning to a romantic meal. This should only take about 30 minutes to fix, and that includes baking time.

Smoked Salmon Bites With Shallot Bites

Ingredients:

1 sheet of thawed frozen puff pastry

¼ cup olive oil

2 shallots

2 tablespoons Dijon mustard

1 tablespoon mayonnaise

1 tablespoon red wine vinegar

1 cup fresh arugula or baby spinach, chopped coarsely

4 – ½ ounces thinly sliced smoked salmon

½ cup of asiago cheese

Directions:

Preheat oven to 400*

Cut pastry into 25 squares after you unfold it.

Grease cookie sheet and add pastry to the sheet.

Bake until golden brown, about 11-14 minutes.

While the pastry is baking, finely chop one shallot and grate the other.

Combine shallots, mustard, mayonnaise, and vinegar in a small bowl.

Whisk while slowly pouring in oil in a steady stream.

Use a spoon to pour a small amount of sauce onto each pastry square.

Put on a layer of salmon and arugula.

Sprinkle on remaining sauce.

Add cheese.

Main Course

For the main course, let’s have another romantic course. This time we will make Marry Me Chicken.

If you are not already married, this recipe may have someone popping the question! It really is that good, and it is also easy to make and incredibly good.

You can make the main course using this easy romantic dinner recipe for the evening and continue from there to a romantic movie or a nice long talk.

This part of the meal should only take you about another 30 minutes to make.

Marry Me Chicken

Ingredients:

6 small chicken tenderloins cut into thinner pieces

Pinch of salt

Pinch of pepper

5 ½  tbsp flour

2 tbsp olive oil

2 tbsp butter

3 tsp powdered garlic

1 c stock from chicken

1 c cream, heavy

½ c parmesan cheese

1 tsp chili powder

¼ tsp oregano

¼ tsp thyme

1/3 c chopped sundried tomatoes

1 tbsp basil 

Directions:

Sprinkle chicken with salt and pepper. Cover in flour.

In a medium skillet, warm up butter, and olive oil in. Make sure skillet is covered.

Brown chicken in skillet, making sure it is cooked all the way through, about 4-5 minutes.

Set chicken aside.

Sauté garlic until you can smell it.

Add chicken stock.

Use a wooden spoon to scrape the bottom of the skillet.

Turn the skillet to medium-low and add the cheese and heavy cream. Let simmer for a couple of minutes.

Combine seasonings and add to mixture.

Add sundried tomatoes and add chicken back to skillet. 

Let sauce thicken for a couple more minutes.

Serve over rice or pasta.

Dessert

You can finish the night with a wonderful dessert. This dessert will make you and your dinner partner incredibly happy. Mini Peanut Butter Cake

Ingredients:

½ cup all-purpose flour

¼ teaspoon baking powder

1/8 teaspoon salt

¼ cup peanut butter

¼ cup butter

½ cup granulated sugar

1 room temperature egg

¼ teaspoon vanilla

6 tablespoons whole milk, at room temperature

½ cup peanut butter chips

Peanut butter cups to garnish

Frosting

Directions:

Preheat oven to 350*

Grease three 4-inch spring pans and then wrap bottoms in foil.

Mix together salt, baking powder and salt, using a whisk.

Add sugar and mix until light and creamy.

Beat in the egg and vanilla.

Add flour mixture alternating with the milk.

Stir in peanut butter chips. 

Divide the batter equally into the three pans.

Bake 20-25 minutes or until toothpick comes out dry.

Remove cake from pans, cutting tops to be smooth, if necessary.

Frost between the cakes and stack on one another. 

Garnish with peanut butter cups.
