These easy and delicious sheet pan chicken fajitas are packed with flavor, colorful veggies, and ready in just 20 minutes, perfect for a quick family dinner!
Preheat your oven to 425°F. In a bowl, mix all the fajita seasonings with 1 tablespoon of olive oil until well combined.
Add the chicken and vegetables to the bowl. Stir well so that everything is evenly coated with the seasoning.
Arrange the chicken strips in the center of a sheet pan, making sure not to overcrowd them. Place the sliced bell peppers and onions along the edges of the sheet pan, keeping them separate from the chicken.
Bake for 15 minutes. During the last 5 minutes, wrap the tortillas in foil and place them in the oven to warm up.
Once done, squeeze fresh lime juice over the entire pan for extra flavor.
Serve the fajitas in warm tortillas. For a zero-point Weight Watchers option, skip the tortillas and enjoy them over a fresh salad.
Notes
High-Heat Magic: For extra char and smoky flavor, broil the fajitas for the last 2-3 minutes—just keep an eye on them!Marinate for More Flavor: If you have time, let the chicken sit in the seasoning for 30 minutes before baking to soak up all the goodness.
