Assemble the baby spring mix, sliced avocado, mozzarella, cherry tomatoes, and basil in a bowl.
In a smaller bowl, whisk together all of the dressing ingredients.
Drizzle the dressing over the salad, and toss to coat. Serve.
You could also add Tuna, Chicken or another 0 point food to stretch your meal further.
Notes
For extra flavor, marinate the shredded chicken in the buffalo sauce mixture for at least 30 minutes before heating.Add a pinch of cayenne pepper to the buffalo sauce for an extra kick if desired.For a creamier texture, sprinkle shredded cheddar cheese over the chicken mixture during the last few minutes of heating, allowing it to melt.
