Press your saute button on your Instant Pot. Add your oil. When the oil is hot, add the pork and brown it until it's about 85% done. It should be a little pink.
Next, add the green onions, garlic ginger, and jalapeño.
Put your rice in an Instant Pot safe dish with 1 ¼ cup of water. Then, place the trivet in your Instant Pot and put the rice on top of it.
Seal the lid on the Instant Pot. Press the manual or pressure cook button and set the time for 8 minutes.
When the Instant Pot beeps, do a quick release. Then, add brown sugar, soy sauce, salt, and pepper to your rice. Stir it and saute it for 3 minutes.
Finally, combine your rice and pork together. Stir well.

Marinated Pork: If you are not using pork cuts, not ground meat, then enhance the pork's flavor by marinating it in a mixture of nuoc cham fish sauce (optional), soy sauce, sugar, and garlic for at least an hour before cooking.
Ground Meat from Pork Shoulder: For Vietnamese pork dishes, opt for pork shoulder over pork loin; its higher fat content ensures juicier ground meat. Coarsely grind or finely chop for authentic texture and flavor.
Soy Sauce: For Vietnamese Pork, use light soy sauce for a subtle flavor, not overpowering like thick soy sauce or dark soy sauce, which is thicker and more intense.
