Melt the chocolate according to the package directions. (Melt each chocolate one at a time in the microwave, not all three bowls together.)
Dip each strawberry into the different colors of chocolate. Place on a parchment-lined baking sheet and immediately add the sprinkles. You can also dip some plain and then drizzle a different color of chocolate over them.

Select Firm, Ripe Strawberries: Choose strawberries that are ripe yet firm to the touch. Overripe or mushy berries can release moisture, causing the chocolate coating to crack or slide off.
Melt Chocolate Gently: Use a double boiler or microwave at 50% power in short intervals, stirring frequently. Overheating can cause the chocolate to seize or become grainy.
Add Toppings Promptly: After dipping, immediately sprinkle or roll the strawberries in your chosen toppings—such as crushed nuts, sprinkles, or coconut flakes—before the chocolate sets to ensure they adhere well.
