2 ½lbsSweet potatoes This will be about 2-3 large potatoes.
¾CupBrown sugar packed You can use light brown sugar as well.
2tablespoonSalted butterUnsalted butter will work but you may need to add a bit more salt.
1teaspoonVanilla extractI love using pure vanilla extract.

¼teaspoonSalt Just a pinch!
½CupPecans or walnuts choppedoptional
2CupsMini marshmallows You can cut up regular marshmallows as well.
Instructions
Here are the instructions to steam your sweet potatoes in the Instant Pot. You can steam them on a stove top instead if you don't have a pressure cooker.
Peel your sweet potatoes and cut into 1 inch cubes. Add your sweet potatoes to the steamer insert of your Instant Pot on top of your trivet.
Add one cup of water to the liner of your Instant Pot underneath the sweet potatoes.
Preheat your oven to 350 degrees.
Close your Instant Pot lid and the sealing valve by pushing it away from you. Set the instant pot to pressure cook for. 3 minutes.
Once your instant pot has come to pressure and stopped cooking, do a quick release by opening the sealing valve.
Remove your sweet potatoes and transfer them to a large bowl ready to mash.
Simple step to make the old fashioned Sweet Potato Pie filling
In a bowl mash your steamed sweet potatoes.
Add to your bowl your brown sugar, butter, vanilla extract, pumpkin pie spice, and salt. Add nuts if desired. Mix well.
Transfer your sweet potato filling to an oven safe dish.
Top your sweet potato pie with marshmallows.
Bake for 15 minutes or until the marshmallows are toasted to your liking!
Notes
Fridge: Since this recipe doesn’t have any egg or milk in it, it’s not required to be stored in the fridge. However, it will help it have a longer shelf life if you store it in a cool place.Freeze: To freeze your sweet potato pie, wrap it tightly in plastic wrap and place it in an airtight container or freezer bag.Thaw: It will keep for up to 3 months. When you’re ready to enjoy, thaw overnight in the fridge before eating.
