These Mini Rainbow Pizzas using Einkorn Flour are a fun, colorful twist on classic pizza night! Made with wholesome ancient grain einkorn flour, they feature a light, nutty crust topped with vibrant veggies in every shade of the rainbow. Perfect for kids, parties, or healthy lunches, these mini pizzas are easy to make, naturally beautiful, and full of flavor.
In a large bowl, add water and sprinkle over yeast. Let sit for 5–10 minutes until foamy.
Stir in olive oil and salt.
Add einkorn flour gradually, mixing until dough forms.
Knead gently on a floured surface for 5–7 minutes until smooth and soft (einkorn dough will be stickier than regular wheat).
Place in a lightly oiled bowl, cover, and let rise for 45–60 minutes, or until doubled in size.
Prepare the Mini Pizzas
Preheat oven to 220°C (425°F). Line a baking tray with parchment paper.
Divide the risen dough into small balls and roll each into a mini circle.
Spread tomato passata evenly on each base.
Sprinkle with mozzarella cheese.
Arrange vegetables in rainbow order: red, orange/yellow, green, purple.
Bake for 10–12 minutes, or until crust is golden and cheese has melted.
