If you don’t have coconut yogurt, you can use coconut milk as an alternative.If you prefer the creaminess of yogurt, and aren’t intolerant to dairy, you can use vanilla flavored yogurt.I would recommend using full fat coconut milk for this recipe to ensure that the popsicles turn out nice and creamy.For this recipe, I have kept the blended mixture smooth. If you would want a bit of texture, you can add some frozen mango chunks or diced mango into it before you transfer everything into popsicle molds.If you have some leftover mixture, you can transfer them into ice cube trays and drizzle a bit of lemon juice or lime juice over them and freeze them.If your popsicles have frozen solid, and you’re having trouble getting them out of the popsicle molds, you can dunk the mold in some warm water for a few seconds, and then get the popsicles out.
