Notes
Use Fresh, Ripe Tomatoes: The flavor of your soup largely depends on the quality of tomatoes used. Choose ripe, fresh tomatoes for a vibrant and tangy flavor.Deglaze the Pot: After sautéing, deglaze the pot with a little broth or wine to scrape up any browned bits stuck to the bottom. This adds depth to your soup’s flavor.Pressure Cook to Perfection: Use the pressure cook function on your Instant Pot for about 15 minutes. This will break down the tomatoes and integrate the flavors beautifully.Cut Tomatoes According to Recipe: The tomatoes can be cut into large chunks if you’re planning to blend the soup at the end. If you prefer a chunky soup, make sure the tomatoes are chopped small.
