Add your chicken stock, 1 cup of salsa, and the Chicken breasts to your Instant Pot. Close the Instant Pot lid. Set the Instant Pot to pressure cook on high pressure for 28 minutes. After cooking, naturally release the pressure for 25 minutes. Let the chicken rest until cool.
Shred the chicken meat using forks. Place the chicken in a large bowl. Add your softened cream cheese, Monterey Jack cheese, onions, salsa, and 1 tablespoon of Tejan seasoning. Mix to combine.
Spoon 3 tablespoon of the chicken mixture onto the tortilla and roll it up. Place the taquitos seam down on a parchment-covered baking pan.
Spray the taquitos with non-stick cooking spray. Sprinkle with Spicy Chili Lime seasoning. Bake for 15 minutes.
Garnish your taquitos with more Mexican seasoning, green onions, and sour cream. Serve with your favorite salsa or dip. Enjoy!
