Instructions
Follow the directions on the corn muffin mix box. Combine the Jiffy mix with the egg and milk.
Cut your hot dogs into three sections evenly. This will give you 12 pieces.
Fill each silicone mold halfway with the cornbread mix. Once this is done, insert 1 hot dog piece into the center of each mini corn dog bite.
Add the remaining cornbread mix to each mold, covering the hot dogs completely.
Don't overfill each mold as you want each corn dog to cook evenly. Make sure that each mold is about ¾ full and covers the hot dog.
Pour 1 cup of water into the bottom of your Instant Pot. Place your silicone mold on top of a trivet inside the Instant Pot.
Place the silicone lid and snap into place. If you do not have a lid, you can cover the mini corn dog bites with aluminium foil by laying a piece of foil over the whole mold.
Close the Instant Pot lid. Lock into place and push the valve to its sealing position.
Set your pot to pressure cook on high pressure for 10 minutes. The Instant Pot’s pressure will cook each mold evenly.
After the Instant Pot has finished cooking, allow it to naturally release its steam for 5 minutes. After 5 minutes, open the valve manually.
Once the steam has completed being released, open the Instant Pot. Use something to protect your hands, and grab the trivet using both sides to remove the Corn Dogs from the Instant Pot.
Push the Instant Pot corn dog bites out of the silicone mold. These Corn Dog Bites are a fun twist on traditional corn dogs. They’re easy to make in bulk for a party or gathering.
Notes
You can also use mini cocktail sausages instead of hot dogs for a fun twist on Corn Dog Bites. If you don't feel like pressure cooking, these Corn Dog Bites can also be made in the oven. Simply preheat your oven to 375 degrees Fahrenheit and bake for about 20-25 minutes or until golden brown. Serve hot! Feel free to mix up the flavors by adding shredded cheese, diced jalapenos, or even a bit of BBQ sauce to the Corn Dog Bites before cooking them in the Instant Pot. Get creative and enjoy!
