Peel your gala apples. Slice the apples lengthways. I like to use an apple slicer as it is easier than chopping with a knife.
In a bowl, combine the brown sugar and cinnamon.
Place apple slices into the Instant Pot. Sprinkle the brown sugar and cinnamon. Gently stir.
In a small bowl mix cornstarch and water. Pour the mixture into the pot and stir well. Close the Instant Pot lid and set the valve to a sealed position.
Select the manual or pressure cook button and set the timer to pressure cook on high pressure for 1 minute.
When the Instant Pot is finished pressure cooking the timer will stop counting and the pot will beep. Quickly release the pressure from the Instant Pot.
Let your cooked apples cool and serve. These Instant Pot cinnamon apples are great with vanilla ice cream, whipped cream, or a dollop of yogurt. Enjoy!
