Ground Chicken Lettuce Wrap

These flavorful Instant Pot ground chicken lettuce wraps are a quick and healthy meal perfect for lunch or dinner. They're packed with savory, seasoned ground chicken and fresh vegetables, wrapped in crisp lettuce leaves for a light yet satisfying bite.

Ingredients
  

  • 1 Pound Ground Chicken
  • 2 tablespoon Olive Oil
  • 1 Onion Chopped
  • 2 Scallions Chopped Chives Reserved
  • 2 tablespoon Chopped Cilantro
  • 1 Can Chopped Water Chestnuts 8 oz
  • 1 Lettuce
  • ¼ Cup Hoisin Sauce
  • 2 Tbsp. Low Salt Soy Sauce
  • 1 Tbsp. Rice Wine Vinegar
  • ¼ tsp. Red Pepper Flakes
  • ½ Cup Chicken Broth
  • 2 Cloves Minced Garlic
  • 1 tsp. Minced Ginger
  • 1 Tbsp. Sesame Oil
  • 2 Tbsp. Hoisin Sauce
  • 1 Tbsp. Light Soy Sauce
  • 1 Splash Rice Vinegar

Instructions
 

  • Press sauté mode on the Instant Pot. Once the Pot gets hot, add olive oil.
  • Add ground chicken and onions. Sauté the ground chicken and chopped onions until the meat is no longer pink.
  • While the chicken and onions cook, mix all ingredients for the sauce. Once the chicken is cooked, add the sauce.
  • Stir until all is incorporated. Turn off sauté mode by pressing cancel. 
  • Close the Instant Pot lid and close the valve shut. set the Instant Pot to pressure cook on high pressure for 2 minutes.
  • When the cooking has finished, allow the Instant Pot to naturally release for 10 minutes.
  • Once the 10 minutes are done, manually release the remaining pressure.
  • After releasing the pressure, select cancel, and then sauté mode.
  • Add chopped water chestnuts to the pot and allow the mixture to thicken and simmer for 5 minutes.
  • After 5 minutes, add in the green onions. Stir and incorporate well.
  • Serve immediately in a lettuce leaf and add the romaine lettuce hoisin sauce.
