Mix the mayonnaise and truffle oil until well combined.
Roast Pine NutsRoast the pine nuts in a pan on medium-high heat for about 3-4 minutes, or until golden brown on the outside
Cut the baguette open and spread out the truffle mayonnaise. Add the arugula over the baguette.
Add Roast Beef, Cheese and SeasoningsAdd the slices of roast beef. Add the shaved parmesan. Season with salt and pepper.
Top with Pine Nuts.Top off with roasted pine nuts. Cut in half.
Notes
I've used a fresh sandwich bun to make this roast beef sandwich. You can also choose to lightly toast the bread in a pan over medium heat until it is slightly golden brown and then put the sandwich together.
It is best to serve this roast beef sandwich hot. You can heat it up in a pan or in the microwave to slightly warm it up.
I've used baguette for this recipe, but you can use any other good bread of your choice. Sourdough bread can really complement the truffle sauce that this recipe relies on for the flavor.
