Place one cup of water or broth into the Instant Pot. Add chicken breasts to the instant pot and place the lid on the pot. Set the valve to the closed position.
Set to high pressure for 10 minutes. Once the pot stops counting and beeps release the pressure from opening the valve.
Remove the chicken to a bowl. Drain the liquid and shred your chicken with a fork, placing it back into the instant pot.
Turn the saute button on low. Pour in your favorite barbecue sauce and stir well. The saute will heat the sauce through. Turn off after one minute.
Toast the bread slice over medium heat until golden brown. Place the cooked chicken on one slice of toasted bread, add pickles on top, and optional onions for extra flavor. Cover the chicken filling with another slice of toasted bread to create a sandwich.
Heat a pan or a sandwich press and toast the assembled sandwich until the bread is crispy and golden brown, and the fillings are warm.
Cut the sandwich diagonally and serve hot with your favorite side dish or dipping sauce.
