Tips to Make Pumpkin Feta Sage Muffins

  • Make sure that you’re using real pumpkin! A lot of the canned pumpkin at the store is actually squash – not even real pumpkin. ALWAYS read the ingredients to be sure!
  • Chop the spinach finely so that it pairs well with the rest of the muffin texture.
  • Don’t overmix the batter. It can make the outcome of the muffins tough so just be sure that you’re mixing enough to combine well.
  • Don’t overfill the muffin tins. These muffins don’t rise a ton but you don’t want to overfill and then make a mess in the oven.
  • To verify that the muffins are done baking, use the toothpick method. Just insert a clean toothpick into the center of a muffin. If the toothpick comes out clean, remove the muffin pan and let the muffins start the cooling process.

Ingredients:

  • 2 eggs 
  • 1 ½ cups milk 
  • 1 tablespoon dry mustard 
  • ⅓ cup olive oil 
  • 1 ½ cups pumpkin puree 
  • 1 cup spinach, chopped 
  • 1 tablespoon dry sage 
  • ½ cup feta cheese 
  • ½ cup parmesan cheese, shredded 
  • 2 cups flour 
  • 1 teaspoon baking soda 
  • 1 teaspoon salt

How to Make These Pumpkin Feta Muffins

Preparation Instructions:

Preheat oven to 350 degrees, prep muffin tins with nonstick spray 

In a large bowl whisk eggs, milk, dry mustard, and oil 

Stir in pumpkin, spinach, sage, feta, and parmesan 

Sift in flour then sprinkle in baking soda and salt 

Gently fold in egg mixture, do not over mix 

Fill muffin tins ¾ way full 

Bake 20-25 minutes 

Cool 5 minutes in tin then move to wire rack

Make sure that you store leftover muffins in an airtight container. This will keep them fresh for up to 3 days.
