This season is always a crazy time for me. We are often busy planning activities, making costumes and wondering what on earth to make for the Halloween party. Well, today i have a simple and fun idea! This super cute and simple pumpkin pie recipe will hit all the spots when it comes to taste, cooking with ease and finding a great dessert for Halloween.

Even better, you can make this easy pumpkin pie any time of the season and it will be a big hit! It always is!

Why Does Pumpkin Pie Use Condensed Milk?

To keep your pumpkin pie from being too runny, use evaporated milk or sweetened condensed milk as a thickener. The heat from the oven will make the filling juices come out. The thickener will stop this from happening and help to make a delicious pumpkin pie!

Ingredients Needed for This Delicious Pumpkin Pie

  • flour 1 cup
  • butter 1 cup
  • 1 egg yolk;
  • 1 tbsp sugar;
  • 1 tablespoon of cold water.
  • For the filling:
  • 350 g of baked pumpkin;
  • 2 eggs;
  • 1/2 cup sugar;
  • 1/2 cup condensed milk;
  • 1 tbsp flour;
  • A pinch of: cinnamon; nutmeg; dry ginger; cloves; allspice;
  • For meringue:
  • 1 egg white;
  • 3 tbsp of white sugar

How to Make a Pumpkin Pie for Halloween

Mix flour and sugar and cold butter to make crumbs.

Add the yolk and 1 tbsp. l. of cold water, assemble the dough into a ball and put it in the refrigerator for an hour.

Cut the pumpkin into pieces and bake for 30 minutes under foil at a temperature of 200°C, cool and chop. You can buy canned pumpkin puree

Mix pumpkin puree with eggs and sugar, add condensed milk, flour and spices, beat with a mixer.

Roll out the dough with a thickness of 3-4 mm. 

Pour the mixture into the pastry casing.

Bake for 15 minutes at a temperature of 200°C, then reduce the temperature to 180°C and bake for another 45-50 minutes.

If you want to decorate a meringue pie, then mix 1 egg white with 50 g of white sugar and beat with a mixer until stable peaks.

Make meringue peaks and place in a tray baking for 12 minutes.

Place the meringues onto the pumpkin pie and add raisins, ginger or nutmeg to create ghost eyes.

Your spooky pumpkin pie is now ready to serve!
