You’re going to go crazy over these Cheesy Mashed Potato Pancakes! Not only are they loaded down with cheese, but they’re just a fun way to make your very own homemade potato pancakes as well. Making potato pancakes with leftover mashed potatoes is one of the easiest recipes, ever! They literally go with anything or can be enjoyed all on their own, too!

What Toppings Do You Put On Leftover Mashed Potato Pancakes?

This is where you can really have fun. Some people prefer to eat them with ketchup, while others like to add on sour cream and shredded cheese. You can even fry an egg and put it right on top to enjoy as well.

Whatever you like to eat with potatoes can be enjoyed with this simple potato pancake recipe!

Mashed Potato Pancakes (makes 12 pancakes)

Prep time: 5 minutes

Cook time: about 12 minutes (depends on the size of the skillet)

Total time: 18 minutes

Ingredients for Left Over Mashed Potato Pancakes

  • Vegetable oil, for frying
  • 2 1/2 cup mashed potatoes
  • 1/2 cup shredded cheddar
  • 1 large egg, beaten
  • 1 TBSP finely chopped parsley
  • 1/2 tsp salt
  • All-purpose flour (optional)
  • Sour cream, for serving 

Mashed Potato Pancake Recipe

1. Over medium heat, add enough oil to a large skillet to cover at least half of the pancake. 

2. In a bowl, mix together the mashed potatoes, beaten egg, cheese, and salt together. If your mashed potatoes are a little thin, add flour 1 TBSP a time so they stay together while cooking in the skillet.

3. Take a scoop of each mixture, then flatten.

4. Cook on one side until golden brown (about 2 minutes), then flip to cook the other side (another 2 minutes). 

5. Once done cooking, place on a paper towel to allow the oil to soak up from the pancake. 

6. Serve with sour cream, ketchup, hot sauce, or it is delicious on its own! Enjoy!

These leftover potato pancakes are the easiest way to use up leftover mashed potatoes.
