This week I visited Tesco to buy some Baby Jersey Royal New Potatoes. My daughter really loves potatoes. She is a huge fan of Jacket potatoes with cheese and so I thought it would be great to try out a new cheesy potato recipe.
Baby Jersey Royal Potatoes are available from Tesco between the months of April and July. These delicious and tasty potatoes have a nutty texture and they are perfect for baking in the oven.
Today I am sharing our Crispy Loaded Hasselback Potato Bites Recipe. These are super tasty and the whole family absolutely love them.
About Jersey Royal Potatoes
Jersey Royal New Potatoes are currently in season at Tesco. These potatoes can only be grown on the island of Jersey, one of Britains Channel Islands.
When Jersey Royals hit the supermarket, we know that Spring has arrived. Jersey Royals are ideal for boiling, steaming, roasting and baking.
These baked Jersery Royal Hasselback Potatoes are a delight and a wonderful food to try during the Spring months. They are fantastic as bite-sized appetisers, but can also be served as a weeknight side dish!
Ingredients for Crispy Loaded Hasselback Potatoes
- 1 bag of Tesco Jersey Royal New Potatoes
- 2 teaspoons of oil
- Salt
- 4 rashers of Bacon
- 1 cup of Sour Cream
- Spring Onion chopped
- Cheese sliced
How to Cook Cheesy Hasselback Potatoes
Begin by slicing thin cuts into your Jersey Royal potatoes. Rub the potatoes with olive oil and salt.
Place your potatoes onto a tin foil tray and bake in the oven at gas mark 6 for 30 minutes.
Once the potatoes are crispy and cooked, add cheese into the potato slices and place back into the oven until the cheese is gooey and bubbly. This takes between 5- 10 minutes.
Now your hasselback potatoes are ready, leave them to cool down for ten minutes.
You can now garnish your crispy Hasselback potatoes with Sour Cream, bacon bits and spring onion pieces.
Your tasty Hasselback potatoes are ready to serve! Enjoy!

I love Hasselback potatoes but have never ever thought of putting cheese between the sliced sections. With bacon and spring onions etc, they just sound divine.
We usually have burgers on a saturday night with sweet potato fries etc, but I think these will be our new Saturday night favourites!
