Low Country Shrimp Boil

When you want a fresh weekend seafood feast that takes less than an hour to make, go with a Low Country Shrimp Boil. Inspired by South Carolina’s coastal land where the ocean meets the Savannah River, the Low Country Shrimp Boil is a fun dish that often gets served up straight on some paper bags or newspaper, sans plate. You can use plates if you want, though. We won’t tell anyone.

*Note: These ingredients are layered, so once you mix the seasoning into the water in step one, do not stir again.

Main ingredients:

2 C water
Old Bay seasoning (generous amount)
1 lb new or small redskin potatoes, quartered
1 onion, sliced
2-4 bay leaves
1 lemon, quartered
Garlic cloves (as much or as little as you like)
2 ears of corn cut into fourths
1 lb andouille sausage
2 lb raw shrimp

Dipping sauce:

½ C butter
More garlic as desired
Old Bay Seasoning

This is the most basic form of the recipe, but feel free to make it your own. Some people add Cajun seasoning in addition to the Old Bay seasoning. Some like to add dried oregano or basil for an Italian flair, chili flakes or cayenne pepper for extra spice, or smoked sausage or kielbasa for a milder flavor.

Low Country Boil Instructions:

Set Instant Pot to saute. Add water and a generous amount of Old Bay seasoning, salt, and pepper.
Add potatoes. Season again with a dash of Old Bay, salt, and pepper.
Add onion, bay leaves, lemon, and garlic. Season.
Add corn. Season.
Add sausage.
Add shrimp.
Season one final time.
Close the lid and cancel saute setting.
Set pressure cook settings on High and cook for 2 minutes.
Do a Quick Release of steam and pressure once cooking is done.
While food cooks and pressure releases from Instant Pot , make dipping sauce.
Open up your Instant Pot and enjoy your feast!

Dipping Sauce Instructions:

Begin to melt butter in small pan.
Add garlic.
Add dash of Old Bay.
