Hashbrowns, Egg and Spinach A Tasty Meal

We have big news! We got the key to a new home! Yes we are moving and that is fantastic news. I’m so so excited. We have a new shell which we can over the coming months and years make our own and decorate and I’m planning to create a palace.

Anyway, we are budgeting and I’ve been trying to empty out the freezer and fridge before our move. It isn’t going to happen because we found lots of 5p bread and 10p milk which has gone back in the freezer but I am mainly using what we have and this is helping save the pennies for our move.

So today we had a new meal. It’s one I’ve never cooked before and it went down a real treat. Sylvia loved it and so did John. I covered the base of the tray in hash browns. The bag cost £1 from Asda and has been in our freezer for a while. I then emptied a bag of frozen spinach over the hash browns.

A few months ago there was tons of spinach going at the shop for 5p a bag and so we have a whole tray of spinach which I have been popping into different meals. Spinach is a great source of Iron and Sylvia is eating it!

I am sure that you’ve heard about the health benefits of spinach, eggs, and potatoes, but let’s break it down here. Spinach is one of the best food items you can include in your diet. Spinach is rich in various nutrients, including Vitamin A, Vitamin C, magnesium, and iron. It’s one of the best foods to add to your diet and incorporate into your healthy lifestyle. You can add spinach in ramen, on your salad, and main dishes.

Spinach also contains several flavonoid compounds, antioxidants, and carotenoids. It’s also a good source of natural nitrates, boosting blood flow to the brain, thus improving memory and focus. Spinach also helps treat hypercholesterolemia (high cholesterol) and hypertension (high blood pressure).

Most households have eggs and potatoes in their kitchen. Why should your diet include eggs? Eggs are an excellent source of protein. In addition, eggs are packed with healthy fats, are low in cholesterol, and have good anti-inflammatory properties. They contain the essential amino acids (the building blocks of proteins) and are a good source of other essential nutrients like Vitamin D, iron, zinc, and selenium. Eggs also contain B vitamins which are very important for your metabolism and overall health.

Potatoes are a source of carbohydrates and fiber, two critical components of a healthy diet. Studies show that potatoes have several health benefits, such as reducing blood pressure, a lower risk of diabetes, and a reduced risk for certain cancers. They’re also rich in nutrients such as vitamin C, potassium, calcium, magnesium, folate, and B vitamins.

To continue, I cracked up all the eggs we had, I didn’t even count but I think there were about 10 eggs which needed using up. We can get 15 eggs for £1 at Aldi and now that’s one less item to take to the new home. I added a pinch of salt and pepper, added a cup of milk and poured the mix over the hash browns and spinach.

I then got half a packet of baby plum tomatoes which are about to go off, chopped them in half and placed them on top of the dish. The oven was at gas mark 6 and we cooked the meal for 40 minutes. The tomatoes were 69p from Aldi.

Altogether the meal cost us £2.74p and there was enough for about 8 servings. Not bad! This went down a treat with John and Sylvia. There is plenty left over too. I think this could be made with pastry and I’m not too sure which option is healthier pastry or hash browns? They are both carbs and one has oil, whereas pastry is made with marg. I will have to look into that.

  2. What a great idea….My fella and the kids would love this but I am not keen on spinach. I will have to think of something to put in it’s place. The hash browns as a base is genius.

  3. Oh yum! What a filling, cheap and yummy meal – great for saving the pennies and filling the tummy. Big fan of stocking the freezer when you get a bargain. Good luck and congratulations on your move too!
