How to Make Homemade Potato Soup
Easy Homemade Potato Soup Recipe
This is a delicious and easy homemade potato soup recipe for the whole family to enjoy. Try this simple and delicious soup recipe today.
Ingredients
- 5 potatoes, peeled and chopped (approximately 3 1/2 cups)
- 4 cups water or broth
- 1 Tablespoon olive oil
- 1 onion, chopped
- Salt and pepper, to taste
- Green onions, optional garnish
Instructions
This soup can be made with fresh potatoes or even use leftover cooked potatoes! You can use half water/broth and half milk if you'd like a creamier soup.
Boil your potatoes in water until cooked well - if you spear one with a fork, it should fall right off.
Drain out the water and leave the potatoes in the strainer as you cook the onion.
Place the olive oil in a stockpot over medium heat and add the chopped onion.
Cook until translucent, about 3 minutes.
Add back in the potatoes and the water or broth.
Cover and cook until the potatoes start to break down, about 20 minutes.
Oh I always do too much mash! This is a great way of using up left-overs
We do too! It;s either too much or not enough… never the perfect amount!

Sharing a story(somewhat unrelated but it does involve potatoes.) We once had to make a potato salad back in 4th grade. Our group made one that tasted so bad that I was traumatized to eat any soup/salad made with potatoes until I was in HS. Lol. If only we made this soup back then things would’ve been much better!

I do love creamy potato soup. This recipe does look amazing. I know I’m going to need to get an immersion blender to do some of this stuff. I have always wanted one and just haven’t pulled the trigger.
I think creamy potato soup is even nicer and than the water only version. I prefer creamy soup. Good luck finding a blender.

This is easy and I love it except the bacon grease. I don’t eat pork.
You can always change that to another kind of fat!

Good question. I’d go with olive oil. That’s the one fat I turn to when your vegetarian. It works well as a oil replacement.
