Chicken Salad Cucumber Bites

Enjoy this Chicken Salad Cucumber Bites High Protein Paleo Treats.

Since having Gastric bypass surgery, I’ve been on a slow road to recovery. Starting out with soups and liquids, pureed foods followed by a soft diet, I’m now entering the final stage where I can begin eating solid foods again. Some foods I cannot eat yet and others I will never tolerate again. I now have to eat 3 small meals a day which are high in protein. I’m told to eat protein first, then vegetables and then carbs.

I’m avoiding carbs where I can. The only carbs I can eat is rice and potatoes. I cant tolerate bread, noodles or pasta at all, so I guess it’s a good thing in a way. So, I am starting to experiment and today I made some Chicken Salad Cucumber bites. I love cucumber and so does Sylvia and the whole family likes chicken so I thought we would try this new snack.

Chicken Salad Cucumber Bites


1/3 cup of light Mayonaise

1/3 cup of thinly diced red onion

1 cooked chicken breast diced into small squares

1 tsp of salt

1 tsp of ground pepper

1/2 a cucumber sliced into circles

The Method for making these Chicken Salad Cucumber bites is pretty simple and easy.

You mix all the ingredients (minus the cucumber) together in a bowl. Then scoop one teaspoon of the Chicken mix onto each cucumber slice.

It’s really that simple.

The recipe went down well with my family and although I could only manage 3 cucumber bites, John and Sylvia finished the rest of the bites off.

I wanted to share this recipe for those looking for a healthy but tasty protein base snack which is filling for bariatric patients but also great for any family wanting something different with no carbs.

We added bacon to ours for some extra flavour but you can pick and choose what you use.

      Soup is great at the start. Some have pureed chicken in low fat gravy and pureed veg like carrotts, mash and sweet potato. You can have sloppy porridge. I have some blog posts on it too!

    Hi Angela, these little bites would make a good nibble for a party or barbecue too! The addition of bacon is something I would definitely do as well, chicken and bacon work so well together!
